With the summer sun heating everything up, you don't want to fire up your oven in order to pull together an amazing dessert. Instead, try one of these refreshing and easy no bake desserts, which will surely be the hit of any summer party or get-together.

Watermelon Sorbet

Easy no bake Watermelon Sorbet Dessert

Cookie Dough and Oven Mitt has your answer to the perfect frozen treat for summer -- Watermelon Sorbet. For an extra watermelon pop of color, serve this no-bake dessert in green bowls.

Total time: 3 hours 35 minutes

Serves 4

Ingredients:

  • 4 cups seedless watermelon, chopped
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lime juice

Instructions:

  1. Remove the rind of a seedless watermelon and chop it into chunks.
  2. Combine granulated sugar, water and lime juice into a saucepan, and heat over medium until dissolved.
  3. Pour the heated sugar mixture into a blender, and add in the watermelon chunks. Blend until smooth.
  4. Pour the watermelon mixture into a large bowl, and chill in the refrigerator for 3 hours.
  5. Spoon the chilled watermelon mixture into an ice cream maker, and allow it to run for the allotted time, approximately 15 minutes.
  6. Transfer the mixture into a bread loaf pan and cover the top with plastic wrap.
  7. Freeze overnight.

Total time: 20 minutes to make, refrigerate overnight

Serves up to 12

Ingredients:

  • 2 small boxes vanilla instant pudding
  • 3 1/4 cups milk
  • 8 ounce container non-dairy whipped topping
  • 14.4 ounce box graham crackers
  • 1/3 cup cocoa powder, unsweetened
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla extract

Instructions:

  1. Combine the instant pudding with 3 cups of milk. Beat until completely combined.
  2. Add in the non-dairy whipped topping and stir until combined.
  3. Line the bottom of a 9-by-13-inch glass baking dish with a layer of graham crackers.
  4. Cover the graham crackers with half of the pudding mixture.
  5. Add another layer of graham crackers, followed by the remaining pudding.
  6. Top with a third layer of graham crackers and set the dish aside.
  7. Combine the unsweetened cocoa powder, the remaining milk and the sugar in a saucepan, then bring the mixture to a rolling boil. Allow to boil for 1 minute, stirring continuously.
  8. Remove the saucepan from the heat, and allow the mixture to cool for 1 minute.
  9. Add in the butter and vanilla and stir until melted and combined.
  10. Cover the top graham cracker layer with the chocolate topping.
  11. Refrigerate overnight.

Nothing says summer like refreshing strawberries, especially when they're transformed into this decadent Strawberry Icebox Cake, courtesy of I Heart Naptime.

Total time: 2 hours 22 minutes

Serves up to 12

Ingredients:

  • Graham crackers
  • 1 pint heavy whipping cream
  • 8 ounces cream cheese
  • 5 tablespoons granulated sugar
  • 1 1/2 teaspoons vanilla
  • 1 pint strawberries, sliced
  • 1/2 pint strawberries, halved
  • Chocolate syrup

Instructions:

  1. Line the bottom of a 9-by-9-inch glass pan with graham crackers.
  2. Pour the heavy whipping cream in a large bowl, and beat until stiff peaks form.
  3. Add in the cream cheese, granulated sugar and vanilla, and stir until smooth.
  4. Spread 1/3 of the cream cheese mixture over the graham crackers.
  5. Cover the cream cheese mixture with 1/3 of the sliced strawberries.
  6. Repeat this process add additional layers of graham crackers, cream cheese mixture and sliced strawberries.
  7. Refrigerate for 1 hour.
  8. Top with strawberry halves and drizzle with chocolate syrup before serving.

Who says you can't serve cheesecake in a glass. Thanks to Country Clever, you can make this delicious cheesecake dessert without even stepping foot near your oven.

Total time: 2 hours 30 minutes

Serves 4.

Ingredients:

  • 1 box Tagalong Girl Scout cookies, chilled
  • 2 tablespoons utter, melted
  • 1 1/2 cups heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/3 cup granulated sugar

Instructions:

  1. Chop the Tagalong cookies into a fine crumble using a knife, pastry cutter or in a food processor.
  2. Combine the crumbled cookies and melted butter in a bowl, and stir until completely combined.
  3. Press the mixture into four glass bowls, pressing it into the bottom. Set the bowls aside.
  4. Pour the heavy whipping cream in a large bowl, and beat until stiff peaks form.
  5. Reserve 1 cup of the whipped cream for the topping, and set the main bowl of whipped cream aside.
  6. Stir together the peanut butter and cream cheese in a separate bowl until smooth.
  7. Add in the granulated sugar and stir until completely combined.
  8. Fold the whipped cream into the peanut butter mixture, and spoon the mixture into the four bowls.
  9. Chill in the refrigerator for 2 hours.
  10. Top with the reserved whipped cream before serving.

Ingredients:

  • 5 tablespoon butter, unsalted
  • 3 tablespoon heavy whipping cream
  • Pinch of salt
  • 1 teaspoon orange extract
  • Orange food coloring
  • 8 ounces white chocolate, chopped
  • 1/3 cup powdered sugar

Instructions:

  1. Combine butter and heavy whipping cream in a saucepan, and heat over medium until melted.
  2. Add in the salt, orange extract and a few drops of orange food coloring. Stir well.
  3. Place the chopped white chocolate into a double boiler, and heat until smooth and melted.
  4. Pour in the butter mixture, stirring until completely combined.
  5. Refrigerate for 2 hours.
  6. Scoop out the mixture into balls using a melon baller or a spoon, then roll each ball around in powdered sugar.
  7. Serve immediately or store in the refrigerator.
