French Toast Casserole

Ingredients:

  • 1 loaf French bread, cubed
  • 8 large eggs
  • 2 cups milk
  • 2 cups half-and-half
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 cup brown sugar
  • 3/4 cup butter, softened
  • 3 tablespoon maple syrup
  • 1-1/3 cups chopped walnuts

Directions:

Spray a large baking dish with cooking spray and add French bread cubes. Combine eggs, milk, half-and-half, vanilla, nutmeg, and cinnamon. Whisk until well combined. Pour over bread. Cover and refrigerate overnight. In the morning, combine brown sugar, butter, maple syrup, and walnuts. Spread mixture over the top. Bake at 350 degrees for 50-55 minutes, until golden.

Egg, Sausage, and Cheese Bake

Ingredients:

  • 8 slices white bread, cubed
  • 1 pound Italian sausage links, casings removed, chopped
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 9 large eggs
  • 3 cups milk
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 tomato, chopped

Directions:

Spray a large baking dish with cooking spray and add the bread cubes. Cook sausage in a large skillet over medium heat until no longer pink. Drain and place over bread. Top with cheeses. In a large bowl, add the remaining ingredients. Whisk until well combined and pour over the casserole. Bake at 350 degrees for 50 minutes or until golden. Top with chopped tomato.

Ingredients:

  • 1 cup biscuit mix
  • 4 tablespoons sugar
  • 1 tablespoon butter
  • 6 ounces cream cheese
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh fruit (strawberries, blueberries, kiwi, etc.)

Directions:

Mix biscuit mix, two tablespoons sugar, butter, and three ounces cream cheese until a stiff dough is formed. Divide into six parts; press into the bottom and 1/4 inch up the sides of six tart pans. Bake 10 minutes or until golden. Cool in pans on wire rack, about 30 minutes. Remove tart shells from pans. Mix remaining cream cheese, two tablespoons sugar, sour cream, and vanilla extract until smooth. Spoon mixture into tart shells and top with fruit.

Banana Bread

Ingredients:

  • 2 ripe bananas, peeled
  • 1/3 cup butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour

Directions:

Spray a 4x8-inch loaf pan with cooking spray. Mash bananas with a fork until smooth. Mix in butter. Add baking soda and salt. In a separate bowl, mix sugar, egg, and vanilla extract. Add to banana mixture. Slowly add in the flour. Pour into the loaf pan. Bake for one hour at 350 degrees.

Overnight Oats

Ingredients:

  • 1/2 cup plain Greek yogurt
  • 1/2 cup rolled oats
  • 2/3 cup milk
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup
  • Fresh blueberries

Directions:

Mix all ingredients together and add into a canning jar. Refrigerate overnight. Serve topped with blueberries.

Maple Bars

Ingredients:

  • 1 can refrigerated biscuit dough
  • 2 cups canola or vegetable oil
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 3 tablespoons milk
  • 1 tablespoon corn syrup
  • 2 teaspoon maple extract
  • 1/2 teaspoon vanilla extract
  • 2 cups powdered sugar

Directions:

Separate biscuit dough and stretch the biscuits into an oblong shape. Combine butter, brown sugar, milk, corn syrup, maple extract, and vanilla extract in a small saucepan. Heat for about 5 minutes until sugar is dissolved. Remove from heat and slowly add in powdered sugar, whisking until smooth. Keep glaze warm. Heat oil in a medium saucepan to 350 degrees. Drop in biscuits one at a time, cooking about two minutes per side. Once bars are cool, dip each bar into the glaze and allow to cool.

Ingredients:

  • 10 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 loaf French bread, cubed
  • 1/2 lb. ham, chopped
  • 1 1/2 cups shredded cheddar cheese

Directions:

In a large bowl, whisk together eggs, milk, and salt and pepper to taste. Spray a large baking dish with cooking spray. Add bread and top with ham and cheese, and pour egg mixture over. Bake at 350 degrees for about 50 minutes or until golden.

Breakfast Potatoes

Ingredients:

  • 3 tablespoons olive oil
  • 5 red potatoes, cubed
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • Salt and pepper, to taste

Directions:

Heat oil in a large nonstick skillet over medium heat. Stir in potatoes and cook, covered, for 10 minutes. Add garlic, onion and bell pepper. Cook, uncovered, for about 15 minutes. Season with salt and pepper.
