  • Americanized spelling of German Pfersching (or the variants Pfirsching, Pförsching), a metonymic occupational name for a grower or seller of peaches, from Middle High German pfersich ‘peach’ (of Latin origin : see Persico).
  • Gen. John Pershing (1860–1948), the commander of U.S. forces in World War I, was descended from Alsatian Huguenots whose name was originally Pfoersching.
