  • French : from Old French paille ‘straw’, hence a metonymic occupational name for someone who gathered straw or used it to make hats or mattresses. It may also have been a nickname for someone with straw-colored hair.
  • A Paillé from the Poitou region of France is documented in Beauport, Quebec, in 1678; he was also known as Payer.
