Back to school means the lazy, relaxing weekday mornings of the summer are quickly replaced with hectic ones. Between making sure your kids brush their teeth, packing book bags, and getting yourself dressed, you actually have to make (and eat!) a healthy meal. To help make your mornings run a little more smoothly, here are five breakfasts you can make the night before:
1. Overnight Oats

Overnight oats are a real treat. Instead of cooking the oatmeal, it soaks in a combo of yogurt and milk until it's super creamy and delicious. The basic recipe calls for one-half cup oats, one-third cup milk, one-half cup yogurt and one teaspoon vanilla extract. Add any toppings and mix-ins you like, such as fresh fruit, nut butter and nuts or seeds.
2. Easy Spinach Quiche
This easy spinach quiche feeds a crowd and tastes delicious, but only takes a few minutes to whip up. Beat six eggs with one cup milk. Add in one cup shredded cheese and one cup chopped fresh spinach. Pour the mixture in a greased 9x13 casserole dish. Toss it in the microwave for a few seconds to heat up in the morning.
3. Breakfast Quesadilla
What kid doesn't love quesadillas? Beat four eggs and scramble on a skillet. Spoon eggs onto two whole what tortillas and top with one-half cup cheese, dividing evenly. Fold the tortilla over and heat on the skillet until crispy. In the morning, heat it up in the microwave or a few minutes on a hot skillet.
4. Freezer Waffles

Freezer waffles are super easy to make. Mix 1 3/4 cups flour, two tablespoons sugar, one tablespoon and baking powder in a bowl. Beat together two eggs, 1 3/4 cup milk, one half cup melted butter and one teaspoon vanilla in a separate bowl. Add wet mixture to dry mixture and stir until just combined. Pour batter onto a greased waffle iron. Freeze individually and then place into freezer bags to store and just pop a waffle in the toaster in the morning.
5. Smoothie Packs
If your kids love fresh smoothies in the morning, this trick will help you make them in no time. Just measure out all of your ingredients for each smoothie and place in a freezer bag. For example, place a handful of spinach, one banana and a cup of mixed berries in a bag and place in the freezer. In the morning, just dump out the mix into your blender, add a half of a cup of your favorite milk and blend for the perfect smoothie.
