Wheat Crisps

We’re huge fans of crackers in the Sweet Pea home. More often than not, if any of us had our druthers, snack time would involve crackers. I love them, so I can hardly fault the boys for craving the same carb overload snack as their mom. So it was with a good deal of anticipation that we found a cracker recipe to try. A girlfriend had told me they were easy to make, and the recipe seemed easy enough, so I decided to give it a crack. Wheat Crisps 1-½ cups of whole wheat flour ½ teaspoon salt 3 tablespoons vegetable or olive oil ½ cup water Extra salt for the top of the crackers Preheat oven to 350 degrees. In a bowl, mix the flour and salt. Add the oil and water, mix until just blended, being careful not to overmix. On a lightly floured surface, roll the dough out as thin as possible - no thicker than 1/8 inch. Place dough on baking sheet, and score the dough in a square pattern with the back of a butter knife. Sprinkle the tops with additional salt. Bake for 15 – 20 minutes, or until crisp and light brown. Once they are fully cooled, you can break into squares. Makes about a few dozen crackers. The boys loved making these crackers, and they did taste pretty good. Overall, I would definitely make these again, though the ease of opening a box vs. making them from scratch probably makes these a once-in-awhile thing for us to try. SPC
