Warm Up Your "Six More Weeks of Winter"

Well, if Punxsutawney Phil is right, we're in for six more weeks of winter. If you have caught any of my recent posts, you know that Ohio has been feeling anything but tropical these past few weeks. As February rolls closer to March, my impatience for spring generally hastens and I find myself actually watching the Weather Channel to see if perhaps, just maybe, the seven-day forecast shows a gradual uptick in the temperatures coming on the horizon. To help appease my need for warmth, I whipped up these easy "pizzas" for dinner. This recipe is easy, super fast, and may even have you feeling like you are in the islands for a moment or two. Individual Hawaiian Pizzas 6 English muffins, split 8 ounces (1 package) of light cream cheese 1/2 cup of diced pineapple 5 bacon slices, cooked and crumbled 1/2 teaspoon onion powder 1/4 teaspoon ground black pepper 1/2 to 1 cup of shredded cheese (you can use Mozzarella, Monterey Jack or something similar) Preheat your oven to broil. Split the English muffins and place, inside side up, on a cookie sheet. Place under broiler for about 4-5 minutes, or until slightly browned. Meanwhile, combine the cream cheese, pineapple, bacon, onion powder and black pepper in a bowl. Spread a couple of tablespoons of this mixture on each toasted English muffin. Top each English muffin with approximately 1 tablespoon of shredded cheese. Place under the broiler for another 4-5 minutes, or until cheese has melted and is bubbly. Serves 4-6. This is such an easy way to create a quick meal to warm up the coldest of winter nights. SPC
