Pizza Roll-Up

My first grade son packs his lunch every day, but almost never has a sandwich. He is not a sandwich-lover and therefore, I’ve had to get creative with packing his lunch. I often rely on his Thermos Funtainer Food Jar, a great tool for enabling me to pack hot lunches and leftovers for school lunch time. In fact most lunches I pack have some sort of thermos, food container or other reusable lunch bag item. Last month however, R had two school field trips in which they asked for a packed lunch that was fully disposable. When I need to pack an easy-to-eat, easy-to-pitch lunch, I need to find a main dish that fits in a plastic bag or sheet of wrap. In lieu of a sandwich, our field trip lunches have both sported the quick idea below. On a typical school day, I take this tortilla wrap and slice it a la sushi, placing the tortilla rolls in a plastic container. But for field trip days, the whole wrap slides nicely in a plastic bag, and R claims he eats it all. Pizza Roll-Up 1 whole wheat, flour or spinach tortilla 2 tablespoons marinara or pizza sauce ¼ cup part-skim shredded mozzarella cheese “pizza” toppings: sliced olives, peppers, pepperoni, ham or whatever you choose Place the tortilla on a microwave safe plate and microwave for 15 seconds on high. This makes the tortilla easier to roll up without splitting. Spread the pizza sauce over the entire top of the tortilla. Sprinkle the shredded cheese over pizza sauce, reserving a 1 inch border on one “side” of the tortilla. Top with olives or whatever you desire. Roll the tortilla tightly, toward the 1 inch border without toppings. The extra marinara sauce with no toppings will help keep the tortilla firmly closed. Slice off the two ends of the tortilla (a midnight snack, perhaps?). Place in a plastic bag whole, or slice into 5 roll slices and place in a plastic container. Serves 1. SPC
