“A spoonful of sugar helps the medicine go down, medicine go down, medicine go down…” Green beans are hardly medicine, but one could argue that with all the good nutrients and other vitamins and antioxidants that opening your vegetable drawer of your refrigerator is akin to opening the medicine cabinet. Lots of good, healthy powerful things reside inside vegetables, and I am convinced that eating your veggies can help ward off certain maladies. So with this theory in mind, perhaps it is apropos that I began with the familiar line from Mary Poppins. If sugar helps medicine go down, then the slight sweetness in their lemon glazed green beans, which comes from a mere teaspoon of honey, helped these green beans get gobbled up by R and G. Lemon Glazed Green Beans ½ pound fresh green beans, steamed zest from one lemon (about 1 – 1 ½ teaspoons) 2 teaspoons olive oil 1 teaspoon honey ½ teaspoon salt dash of ground pepper Steam the green beans until tender, about 5-7 minutes. Immediately drain and rinse under very cold water (doing this will preserve the green color of the beans, and avoid them turning grayish-green). In a medium bowl, mix the lemon zest, olive oil, honey, salt and pepper. Stir well to combine. Add the green beans to the lemon mixture and toss well to ensure a good coating on all the beans. Serve at room temperature. Serves 4 as a side. SPC
