Chicken Parmesan (Baked)

Time needed:
10-15 min. prep; 30 min. bake

Number of servings:
one recipe coats approx. 4; multiplies easily

Description:
While it can't be completed in a flash, prep is Quick, and the reasonable bake time allows salad or veggie prep (luv that bagged salad mix, and Basic veggies in microwave!), table setting, dealing w/kids and spouse, etc.

Ingredients:
4 boneless, skinless chicken breasts

1 egg, beaten

3/4 c. Italian seasoned dry bread crumbs

1 jar of your Very Favorite deluxe Pasta sauce (26 oz. will cover at least 6 pieces chicken)

1 c. shredded mozzarella (approx. 4 oz.)

grated Parmesan cheese, as desired

Instructions:
Preheat oven to 400 degrees F.

Dip each piece of chicken in egg, and then in bread crumbs.

Arrange chicken pieces in Large casserole or baking dish.

Bake uncovered for 20 minutes.

Pour sauce over chicken; top with cheese(s).

Bake 10 minutes more, or until chicken is no longer pink and juices run Clear when you poke one piece w/knife.

Other comments or suggestions:
Serve with cooked pasta, veggies or salad, perhaps fruit.

When I made this, one egg was sufficient to coat 6 fairly large chicken breasts, but had to ask one of the kids to shake another 1/4 cup or so of crumbs into the bowl.

For that reason, there's no reason to triple or quadruple the recipe until you see where just Double takes you; it's ultra basic to amend later, and excess egg and coating in the bowl isn't something one saves, for health reasons. The size of the Bird pieces has much to do with the mileage you get!

My almost-13 year old loved this. She didn't Say so, directly, but her plate was totally cleaned, and she's been getting over the flu, just now bouncing back. Still has a red nose like Rudolph, but eats again! ;-)
