Description:
Kids and parents alike love quesadillas, and this is an easy recipe! It only takes about 15 minutes to prepare, leaving you plenty of quality time with the kids!

Ingredients:
1 pound boneless, skinless chicken cut into small strips
1 small can of chopped jalapeno peppers
2 cups chopped tomato
1/3 cup frozen chopped onion
1 teaspoon ground cumin
1 teaspoon oregano
1 teaspoon garlic powder
Eight 6-inch flour tortillas
1 cup grated cheddar cheese
Non-stick cooking spray

Instructions:
1. Coat medium skillet with non-stick spray. Add chicken and sautT over medium high heat for 3 minutes.
2. Add jalapeno, tomato, onion, cumin, oregano, and garlic powder. SautT 2 minutes, remove from heat and set aside.
3. Preheat oven to 450?.
4. Lightly spray cookie sheet with non-stick spray. Place 4 tortillas on cookie sheet and spread each one with 1/4 the chicken mixture. Top with 1/4 cup of cheese and another tortilla.
5. Bake in a preheated oven for 9-11 minutes.
6. Serve with salsa, sour cream and tossed green salad.
