Description:
Gumbo is an easy-to-fix one dish meal. You are only going to need one saucepan and a cutting board for this one, so cleanup is a breeze, too! This is an especially good one for the nights when everyone is going in ten different directions because it takes less than 20 minutes to prepare and is easy to eat quickly.

Ingredients:
3/4 cup frozen chopped onion
3/4 cup frozen chopped green pepper
1/4 cup frozen chopped celery
1/4 cup water
One 28-ounce can tomatoes
1/4 teaspoon garlic powder
1/4 teaspoon rosemary, crushed
1/4 teaspoon paprika
1/2 teaspoon pepper
1 1/2 cups water
One 6 1/2-ounce package quick cooking long grain and wild rice mix
One 16-ounce package frozen peeled shrimp with veins removed
One tablespoon Tabasco sauce

Instructions:
1. In a large saucepan, combine onion, pepper, celery and 1/4 cup water. Bring mixture to a boil and reduce to medium low heat. Cover and simmer 5 minutes or till veggies are tender.
2. While onions, peppers and celery are cooking, cut up tomatoes.
3. Add tomatoes and liquid from can to onion mixture along with garlic, rosemary, paprika and pepper.
4. Stir in 1 1/2 cups water and both packets of rice mix.
5. Bring mixture to boil. Add frozen shrimp and return to boil, then reduce to medium low heat.
6. Cover and simmer for 4-5 minutes or till rice is tender and shrimp is pink.
7. Ladle into bowls and serve with crusty French bread or crackers.
