Stir-fry is very quick and even easier to make. And kids love to help mommy add all the bright ingredients like broccoli, carrots and peppers! Served with rice, this makes a simple but mouth-watering meal. One option that could make this meal even easier is using chow mein noodles in place of rice; it will save a pan, a few minutes of prep time, and adds a little crunch!
Ingredients:
One pound chicken or beef strips (you can buy these already cut at your local supermarket) One medium yellow pepper, cut into long slices One 16-ounce package loose-pack frozen broccoli, baby carrots, and water chestnuts 3 tablespoons soy sauce 1/2 teaspoon cayenne pepper (optional) 1/3 cup water 1 1/2 teaspoons cornstarch 1/4 teaspoon garlic powder 2 tablespoons vegetable oil 1 cup uncooked rice 2 cups water
Instructions:
1. Place frozen veggies in colander and rinse with hot water till they break apart. Drain well. Start cooking rice according to package directions. 2. Put 2 tablespoons of oil into a cold skillet (or wok if you?e got one!) and preheat over high heat. 3. While skillet is heating, combine 1/3 cup water, soy sauce, cayenne pepper, garlic powder and cornstarch in a small bowl for sauce. Set aside. 4. Add drained veggies and sliced peppers to skillet and stir-fry over high heat for 3-4 minutes or till crisp-tender. 5. Remove veggies and add meat to skillet (if using chicken, you may want to add a little more oil) and stir-fry 3-4 minutes till cooked through. 6. Push meat to outer edges of skillet or wok. 7. Stir sauce, then add to center of skillet. Cook and stir till thickened and bubbly. 8. Return veggies to skillet and stir till coated. Cook and stir one minute more. 9. Serve over rice or chow mein noodles.
