Description:
This casserole is a one-dish meal. You get your protein, your veggie, your starch and your dairy all in one recipe. To add to the appeal of this menu, it is easy to make and takes only about 35 minutes.
Ingredients:
6 ounces fettuccine 1 10-ounce package frozen broccoli 3 tablespoons butter 3 tablespoons all-purpose flour 1/2 teaspoon dried basil, crushed 1/4 teaspoon salt 1/8 teaspoon pepper 2 1/2 cups milk 2 1/2 cups chopped cooked chicken (make ahead or use canned) 3/4 cup grated Parmesan cheese Carrot curls
Instructions:
1. Cook pasta according to directions on package. 2. While pasta is cooking, run water over broccoli to thaw, and melt butter in large saucepan for sauce. Preheat oven to 350?. 3. Add flour, basil, salt and pepper to melted butter over medium heat. 4. Add milk and cook, stirring frequently till sauce is thickened and bubbly. 5. Cook and stir one minute more. 6. Remove from heat and stir in chicken, 1/2 cup of Parmesan cheese and broccoli. 7. Add pasta and toss to coat with sauce and chicken mixture. 8. Pour mixture buttered 13? x 9? baking dish. Cover with foil and bake in 350? oven for 15 minutes. 9. Remove foil and sprinkle with Parmesan cheese. 10. Return to oven, uncovered for 5-10 more minutes till heated through. 11. Garnish with carrot curls, if desired.
