Tuna Salad Pita

Description:
Tuna mayonnaise in warm pitta bread with salad leaves and tomato

Ingredients:
1 tin tuna fish in brine. Some mayonnaise. Salad leaves (baby leaves best). Large Tomato. 2 large pita bread.

Instructions:
Warm (or toast) 2 pita breads. Open tin of tuna, empty contents into a bowl, separate the tuna flakes with a fork, and mix into the bowl enough mayonnaise to bind the tuna. Slice the tomato. Prepare some salad leaves.

When warmed (toasted) open (to make a pocket) each pitta bread and place salad leaves in the base, add a dollop of the tuna mix, then some more salad leaves, and then another dollop of the tuna mix. Insert two/three slices of tomato down the sides of the mix in the pitta bread.
Serve.

Cut pitta into half, before filling, to make two pockets for younger children.

Other comments or suggestions:
Gets mine to eat salad and tomato which they would not otherwise (easily) do.
