Poached Salmon L'Orange

Time needed:
approx. 20 min.

Number of servings:
one per 1/2 lb. fillet

Description:
Serve with rice and vegetables.

Ingredients:
One half-pound salmon filet per person (skin removed)

Onion slices

Approx. 2 cups orange juice

Instructions:
Place fish in Large frying pan. Pour Orange Juice over fish until it covers half the thickness of the filets. Place onion slices on top of each serving of fish. Cook over medium heat, Covered, until the fish is thoroughly Flaky, even at thickest part.
(This will be 5-10 minutes per inch of thickness.)

If you like, you may reduce the liquid, for Sauce, by removing the fish to a warm plate, and simmering the OJ until it thickens (don't burn!) and pour over fish. We didn't bother w/the Sauce; the fish absorbs quite a lot of flavor from its simmering time in the juice.

Other comments or suggestions:
Buy the nicest fresh filets you can get! Well worth it.

Some fresh Italian parsley is nice, snipped over the fillets before serving.
