Estimated Time:
30 minutes
Materials:
2 lb. strawberries; clean and remove stems
1/2 cup sugar (OR utilize similar amount of frozen product, sweetened)
one frozen butter pound cake (10 3/4 oz.)
at least 8 oz. frozen whipped topping OR can of whipped cream
1/2 pt. fresh blueberries (or frozen)
clear plastic cups (9 oz. size)
spoons!
2 qt. mixing bowl, fork/potato masher, knife for slicing cake, and kitchen shears are a bonus.
A cutting board may be helpful---or just utilize a sturdy paper plate.
Description:
Ultra-basic berry dessert for Road Trips of all sorts---or even the picnic at home--with a touch of Patriotic color.
Instructions:
If you have purchased frozen berries, allow them to thaw. Enlist help from others in:
Mashing 2 cups of the berries; combine with sugar if needed.
Slicing the remainder of the berries in half lengthwise, then combining them with the mashed berries.
Rinsing and draining the blueberries, if they are the fresh variety.
Cutting the pound cake into 1/2 inch cubes. If you have some kitchen shears along, it may work to slice the cake into 1/2 inch slices with a knife, then cut 1/2 inch strips with the scissors, which would be further cut into 1/2 inch cubes.
--------------------------------
Place cubes in the bottom of each clear plastic cup, pretty much in a single layer.
Spoon in a layer of berries.
Squirt or spoon in a layer of topping.
You will want to end with a layer of topping and then blueberries; (Make one "prototype" and copy?)
You want a red, white, and blue look, except don't squander any blueberries on them that won't eat 'em! ;-) It pays to ask before adding that last layer of blueberries to individual portions.
By the way, this is a Simplified version of an already simple recipe from the California Strawberry Commission. They have a website at www.calstrawberry.com
It's chock full o'recipes and photos to make any strawberry lover salivate: grilled salmon with strawberry salsa, strawberry-poppy seed salad, calypso strawberry-mango salsa...there was a strawberry-stuffed french toast...and perfect for the 4th of July or Flag Day is "All-American Berry Pizza", which begins with a base of sugar cookie dough from the grocer's refrigerator case, and is topped with a blend of whipped cream and yogurt, then a kaleidoscope pattern of strawberries and blueberries. Awesomely Attractive and kid-friendly. Those who camp with RV's equipped with kitchens can really go Deluxe in the food department--but even they have refrigerator space issues! ;-)

Other comments or suggestions:
If you are camping, Do Not Eat inside the Tent; it draws bugs and critters. Yogi Bear is cute only on TV; don't tempt him to visit your campsite by leaving food out in the open After meals, or even sitting out in an ice chest, or visible in your car. If you are in Bear Country or there are other major critters in the area, there will likely be safety rules in place for food handling, garbage disposal, campfires and other activities. Follow them! Yogi luvs berries...and about anything else. Bears that form the habit of visiting campsites have to be relocated, or worse...so don't encourage them. Similarly, items like Cheez Nips and potato chips are not part of the natural Food Chain for ducks, geese, chipmunks, or other wildlife, and probably don't enhance their health. Make sure the kids (and adults) are attending to handwashing and washing/rinsing dishes correctly, and that foods are stored at proper temperatures. If GI disturbances are a bummer at home, they are far worse in remote areas. Don't drink from the "sparkling creek", either!
