Take some great pictures (lots!) at field trip(s), or during special activities.

Instructions:
Get double prints made, and give the second set to the teacher.

Other suggestions or comments:
My thoughts are, it's nice to give options for how the teacher would save them. I'd likely pop the pics into an inexpensive, small plastic album just to keep them neat and protected, with a sticker or other notation of the class year, location, and other data, and give a nicer, big album for Posterity.

"Scrapbooking" isn't an area I am into yet.
