Description of lunch box recipe:
My son can be really picky at times about his lunch. This one is a real pleaser to my 5 year old because he assembles it himself!

Directions:
*** In seperate snack bags add:

6 - 10 pre-sliced Pepperoni rounds or baked ham or turkey rounds (I have the deli clerk slice these coldcuts thick which makes it easier to cut into rounds -- use a knife or cookie cutter to create small circles about the size of a cracker)

6 - 10 rounds/squares of cheese such as American, Cheddar, Munster, Mozzarella, your favorite

10 - 12 Crackers (we use low salt/whole wheat)

Throw in a piece of fruit and some milk or 100% fruit juice and you have a nice lunch for a hungry kid!

Be aware, however, that some pepperoni is extremly high in fat. Today there are many excellent low fat and alternative items (such as vegen or turkey pepperoni) which are very tasty. And if you don't tell them...they may never realize you are giving them a low fat alternative to a meal they enjoy!



Other suggestions and comments:
Since my son is just begining to read, I don't include a note with his lunch. Instead, I place a sticker on the sandwich/snack bag his lunch is in. He enjoys the stickers and knows that I am thinking about him!
