Description of lunch box recipe:
Potatoes, about 2 cups (either mashed or whole, partially cooked through boiling for about 20 minutes)
Eggs (quantity depends on how much you want to make)
Salt to taste
Butter (to fry potatoes)
Directions:
Leftover in the fridge by accident. I fry some potatoes (either mashed or home fries type) in some butter and allow the potatoes to get golden brown. Add some salt. Mix a few eggs with milk and pour in the whole mixture. Stir until egg is cooked. What happens is that the egg sticks to the potato for a wonderful lunch or supper idea. My boys both love it. If I prepare in advance, I just nuke them in the microwave for a few minutes and put in Thermos. By lunch time, the potato and eggs are still warm. You'll see how many compliments you get! My boys both refuse to trade lunches with other kids when I make them this special lunch.
