Description of lunch box recipe:
Cottage cheese is a good way to add calcium to your child's meal. The chips are a low-fat baked treat. The "mixers" can be anything from salsa (with corn chips for dipping) or fruit (with the flour chips for dipping) or my son's personal favorite...black pepper!! He loves it plain!!

Directions:
I'm going to start with the chip dippers. There are two kinds of chips I use for dipping. And they are both prepared basically the same way. You need flour and/or corn tortillas. Take the tortillas and cut them into fours (or eights depending on the size) then sprinkle with water and (for the flour variety) add cinnamon sugar. Bake them in the oven until they are crisp.

I am a lover of the cheap containers you can buy...you know the Gladware and Ziplock types. Take a small container and fill with cottage cheese. Then you can add the "mixers." You can add anything like salsa (Super Target has a great salsa that has corn and beans and such mixed in...very healthy) or you can add fruits and/or veggies of your choice. Advocados are another personal favorite. Send with the appropriate chips for dipping (my daughter really loves finger foods).

Other suggestions and comments:
This is something that I would highly suggest sending in an insulated lunch box. I am not sure it would stay cold in a brown paper bag. A good tip for keeping your cottage cheese cold is by placing it next to a frozen juice box. I freeze my children's juice boxes and Gogurts to keep them cold and they are great "chillers!" Don't forget the wipes and napkins. Our school doesn't have a cafeteria and the kids can get messy. A spoon is nice, too, to get the stuff the chips can't reach!!
