Description of Easter celebration or activity:
Chocolate Chip cookie dough is molded in a Tablespoon (measuring spoon), baked, and decorated with candies, sprinkles, and Love.
Setting up and preparing for this celebration or activity:
Egg-Shaped Cookie Recipe:
2 c. all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1/2 c. butter, softened
1 egg
6 oz. (1/2 of a 12 oz. pkg)
chocolate chips
2 tsp. vanilla extract
Vanilla frosting, 1 tub
Food Coloring (optional) OR tubes of decorator icing, w/decorator tips
Colored Sprinkles, small candies (chewable, not Hard)
--------------------------------
In small bowl, combine flour, baking powder and salt.
In large mixer bowl, combine sugar, butter, and vanilla, then beat in the egg.
Add dry ingredients, and combine thoroughly.
Add one cup of semi sweet chocolate chips; stir until evenly distributed in dough.
Press the dough into a Greased and Floured tablespoon to create a slightly rounded "egg" cookie. Tap out onto Ungreased baking sheet. (With subsequent cookies, just dip the spoon in a bit of flour before forming each cookie). Make 'eggs' of the remaining dough.
Bake in preheated oven at 350 degrees F. for 12-16 minutes, or until just golden around the edges. Cool for 2 minutes before removing from the cookie sheets to cool completely (on platter, or wire racks).
Frost the cookies, with white or tinted frosting (a few drops of food coloring will color it; stir well!) If you are using sprinkles and candies, just frost a few cookies at a time; once the frosting 'sets up', things don't stick as well.
Sprinkles offer the quickest beauty treatment! Icing can also be tinted, and piped on (with icing bag and tips, or even with a plastic squeeze bottle with small tip) OR just take advantage of the pre-made decorator icing and tips from the store.
Elaborate icing squiggles, zig-zags, flowers, swirls, and stripes can be made, if you like.
Other suggestions or comments:
Allow cookie sheet to cool between batches, to avoid the cookies spreading out. Rotating 2 works pretty well; bake one, load one.
These make a pretty presentation as a small Easter gift, for good friends. The really Good cupcake liners (the kind that are Greaseproof, such as Wilton) really show 'em off well! We put 6 cookies on a flowered paper plate, and after the icing had completely set up, that plate fit nicely into a plastic bag, tied shut with curling ribbon.
The recipe yields about 2 dozen. If you choose to double it, I hope you have Lots of friends to share with! ;-)
