Ingredients: (Hit your return key to start a new line)
Crust:
2 c. all-purpose flour
2/3 c. butter, softened
1/2 c. almonds, toasted and finely chopped
1/2 c. powdered sugar

Filling:
two 8 oz. pkg. cream cheese
1/2 c. sugar
2 eggs
2 Tbsp. lemon juice
1 tsp. vanilla
4 Tbsp. cream or evaporated milk
Directions:
Mix all of Crust ingredients in a medium bowl with a fork or pastry blender, until crumbly. (*1/3 c. of this may be set aside for topping.) Press firmly and evenly in bottom of ungreased 13" x 9" x 2" pan.
Bake until set, 15-20 minutes.
While crust is in oven, prepare filling. Combine cheese and sugar together with electric mixer until fluffy. Add remaining ingredients and mix well; scrape sides of the bowl occasionally.
Pour over baked crust. *Top with reserved crumb topping.
Bake at 350 degrees F. for 20-25 minutes until filling is set.
Cool completely. May be refrigerated, or frozen for later use.
Other suggestions and comments:
I made these for a Christmas potluck party. They taste Fabulous!!! I had some trouble getting a clean cut, but chances are freezing would have partially cured that.
People seem to go for Chocolate at potlucks and bake sales. We're a Chocoholic nation! :-)
Someone else had brought li'l frozen cheesecake tarts (commercially baked and frozen), which were adorable, and colorful with their individual garnish of: mandarin orange, kiwi slice, strawberry, cherry, and other berries. Flavor of the tarts was disappointing; I noticed soggy graham cracker taste above any other property, but the color drew people.
So, if you want your Cheesecake Bars to beckon to people, maybe they would be Fancier with some Fruit decoratively placed on top. At home, they disappear quite quickly without that designer touch!
