1 package Active Dry Yeast
1/2 cup warm water
1 cup real butter
2 1/4 cups all purpose flour
1 tablespoon vanilla extract
1/2 cup sugar
Directions:
Preheat oven to 375.
Soften yeast in warm water. Cream butter in large mixer bowl. Blend flour, yeast, and vanilla extract in at low speed bit by bit. Shape dough into 1 1/2 inch balls. Then, simply roll each ball in the granulated sugar!
Place sugar cookies on greased cookie sheets. For light, chewier cookies, let them rise in a warm place (on top of the stove as it's pre-heating works well) for 15 minutes before baking. Bake at 375 degrees for 20 to 25 minutes.

These cookies can be more Christmas-y if you roll them in green and red granulated sugar. You might also want to add some "sparkle" with other candies.
