Cereal 2 Go Bars

Estimated time:
15 min., plus cooling time

Number of servings:
approx. 18 bars

Ingredients: (Hit your return key to start a new line)
1/2 c. honey or light corn syrup

1/4 c. sugar

1/4 tsp. ground cinnamon (optional)

1/2 c. peanut butter

1/3 c. chocolate chips (optional)

5 c. corn flakes

1/2 c. nuts (your favorite kind) OR raisins

Directions:
Prepare pan (8 or 9 inch square pan works well) by greasing with butter.

Heat honey/syrup, sugar, and cinnamon to a boil in a large saucepan, over medium heat, stirring constantly, and boil/stir for 1 minute. Remove from heat.

Stir in peanut butter, and choc. chips if you want that color and taste difference, until smooth.

Stir in cereal and nuts, until evenly coated. Spread and push/level the stuff into the pan. For ease in cutting, cool about one hour, or until firm.

Cut into bars. One method is cutting into 9 even squares, then cutting each square on the Diagonal for triangles.

Cover for storage.

Other suggestions and comments:
Some might want more peanut butter spread on top, or extra melted choc. chips spread/drizzled. The bars are Very good with no chocolate at all...and the 140 cal. estimate per bar (1/18th recipe) is based upon un-chocolate version.

3 grams of protein, though!

We used toasted, diced almonds...oh, good stuff!! If you are making these for a Group, remember both nuts and peanuts (a 'legume', plant-wise) are now common allergens. Consider putting a Recipe by your serving plate...and maybe having an alternate, un-nutty choice available, too.

It's a fair bet other un-sugared cereals would work with this recipe: krispy rice, oat-y O's...what's in the cupboard today? ;-)
