1 cup all-purpose flour 1/2 cup margarine or butter, softened 1/4 cup powdered sugar 1 cup granulated sugar 2 teaspoons of grated lemon peel 2 tablespoons of lemon juice 1/2 teaspoon baking powder 1/4 teaspoon salt 2 eggs
Directions:
Heat the oven to 350°. Mix thoroughly flour, margarine or butter, and powdered sugar in a small bowl. Press evenly with hands in bottom and about 5/8 inch up sides of an ungreased square pan, 8 x 8 x 2 inches. If dough is sticky, flour your fingers. Bake 20 minutes. Beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust. Bake just until no indentation remains when touched lightly in the center, about 25 minutes. Let stand until cool, then cut into about 1 1/2-inch squares.
Other suggestions and comments:
Your child will have fun helping you measure and mix all of the ingredients as well as pressing the crust into the pan. You should be in charge of pouring the hot filling into the crust.Add coconut to the filling for delicious Lemon-Coconut Squares. Garnish with slices of lemon.
