Estimated time:
Preparation takes approximately 1/2 hour, cooks in 60 to 70 minutes, 10 minutes to cool

Number of servings:
Makes 1 loaf

Ingredients: (Hit your return key to start a new line)
1 1/2 cups of mashed bananas (approximately 3 large)
3/4 cup sugar
3/4 cup vegetable oil
3 eggs
2 cups all-purpose flour
1 teaspoon of baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons vanilla

Directions:
Heat the oven to 325°.
Grease a 9 x 5 x 3 loaf pan with shortening, using a pastry brush.
Mix sugar, bananas, oil, and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.
Bake until a wooden pick inserted into the center of the bread comes out clean.
Let cool for 10 minutes, loosen sides of loaf from the pan with a knife and remove from pan.
Let cool completely before slicing.

Other suggestions and comments:
Use a potato masher to mash up the bananas, kids love to do this. Your child will also have fun helping you measure and mix all of the other ingredients.

Banana bread tastes great served with cream cheese or raspberry jam.
