This is a recipe that begs for your inventive touch.
I was sucked into trying it, 'cuz the recipe I saw had only two ingredients: chicken broth, and a giant Zucchini. To me, it requires more, but not so much more that it's not worth a try.
Directions:
Load the blender with chunks of zucchini, filling to near the top.
Pour chicken broth into the blender, too. (I used a typical can size; near 15 oz.)
Whirr and puree that stuff. Pour it into a soup pot. Simmer for at least 10 minutes.
I think you'll like it wayyy better if you add some of the following:
up to 1 tsp. salt (depends on whether your broth had any in it)
some black pepper (fresh ground, if possible)
1/4 tsp. garlic powder
1 tsp. dill weed (or try some herb blends, like Italian)
sliced carrots (1-2 cups)
and to further mellow it out:
spoon some sour cream or half-and-half into each portion ("light" type is fine)
Other suggestions and comments:
People who can't go near split pea soup won't touch this one, either, but I think it has possibilities...things that zuke gardeners think up naturally. Those of us who don't raise the whoppers sometimes receive them as 'gifts.' There are "just say No!" people, and then there's tightwads, like me.
Other veggies could be added, during the simmer phase.
Diced ham might even be a nice touch. I was goin' for the all-veggie soup.
The original recipe called for a zuke "bigger than your forearm", and a 48 oz. can of chicken broth. I still have 2/3 of the zuke left, and made a smaller potful, 'cuz that's a lot to make for a "trial run," and I know my family ;-) I guess I'll grate the remaining zucchini, and freeze in plastic zip bags, likely cutting out the pithy/seedy middle. My husband tolerates zucchini sneaked into lasagne layers, and bread or muffins work well at potlucks.
My kids distrust any and all flecks of green in casseroles and baked goods. I guess they think I might try to sneak stuff into them. Who, me?!... ;-)
