Granola

Estimated time:
1 hour (needs some cooling time)

Number of servings:
Makes 7 cups granola

Ingredients: (Hit your return key to start a new line)
4 c. rolled oats

1. c. shredded or flaked coconut

1 c. sliced almonds

1/2 c. honey

1/4 c. butter

1 1/2 tsp. cinnamon

1/2 tsp. salt

2/3 c. raisins, dried cranberries, or diced dried fruit bits

Directions:
Combine all ingredients (except raisins) in ungreased 9"x13" pan; mix well. Bake in preheated oven (350 degrees F.) for 25-40 min., stirring at least every 10 minutes, and more often as it progresses, until Golden Brown. Stir in raisins; Cool thoroughly. Store in a covered container or jar, in a cool, dry place, or in refrigerator. Serve as cereal, with milk, or as a snack. Particularly good when layered with puddings (or fruit and yogurt) for parfaits.

Other suggestions and comments:
This might toast up a bit faster in a Jelly Roll pan, which is simply a bit wider, longer, and shallower.

This is easy and inexpensive to make...as long as you remember: Check on it and Stir it! ;-)

You could also add mini chocolate chips; in that event, be sure to cool the granola Completely before adding them.
