Broccoli-Rice Casserole

25 minutes to prepare and 40-45 minutes in the oven.

Ingredients: (Hit your return key to start a new line)
2 cups cooked rice
1/2 cup chopped broccoli
1 box frozen chopped broccoli
1 (8oz.) jar of Cheese Whiz
1/2 to 1 stick butter
1/2 cup chopped celery
1 can cream of mushroom soup (diluted with 1/2 cup water)

Directions:
Cook rice and broccoli according to directions and set aside. Saute onions and celery in butter in large skillet. When transparent, add Cheese Whiz, soup and water. Simmer until well blended. Fold in rice and broccoli and bake in casserole dish for 40 to 45 minutes in a 350 degree oven.

Other suggestions and comments:
A standby, especially on New Years's Day, with ham, black-eyed peas and hot fruit. This recipe was preferred by Debbie Blalock.

2 c. rice (dry measure); grease the casserole dish; cover casserole dish as it bakes. Other fussy hints, too... ;-)
