Leftover Turkey Shepherd's Pie

Prep time - 15-20 minutes. Baking time - 25 minutes.

Ingredients: (Hit your return key to start a new line)
1 tsp. oil
3 cups cooked, cubed turkey
1 large onion, chopped
1/4 cup chopped red or green pepper
1 clove garlic, minced
1 cup chicken broth
1 tsp. salt
1/4 tsp. ground black pepper
1 1/2 cups cheddar cheese, grated
14 1/2 oz. can crushed tomatoes
2 cups canned corn, drained
2 cups prepared mashed potatoes

Directions:
Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside.
In a skillet, heat oil over medium heat. Add onions, bell peppers, and garlic. Cook for 5 minutes until vegetables soften. Add turkey and continue cooking another 5 minutes. Stir in chicken broth, salt, ground pepper, paprika, cheese, crushed tomatoes, and corn. Pour turkey mixture into prepared pan. Spoon mashed potatoes on top of turkey mixture. Sprinkle with additional paprika, if desired.
Bake for 25 minutes or until bubbly.

Other suggestions and comments:
Another great way to use up Thanksgiving leftovers. For any other time of the year, substitute chicken for the turkey. Use leftover mashed potatoes if you have them or whip up a quick batch of instant potatoes.
Also try replacing the mashed potatoes with mashed sweet potatoes.
