Cheesy Twice-Baked Yams

Ingredients: (Hit your return key to start a new line)
3 medium yams (not sweet potatos)
1 cup shredded Monterey Jack cheese
2 T (purple) onion
2 T butter or margerine
1/4 t dried or 1 T fresh Marjorem
1/4 t salt
1/8 t pepper

Directions:
Wash yams and pierce with a fork. Cook in microwave until done. Cut potatos lengthwise and scoop out the pulp. In medium bowl, combine pulp with remaining ingredients. Mix well. Reheat in microwave until cheese melts and serve or spoon mixture into potato skin halves, place on a cookie sheet and heat in a preheated 350 degree F. oven until cheese melts. Garnish with fresh marjorem if desired.

The BEST yam recipe ever. I've yet to meet someone who doesn't like it...even those who claim to be yam-haters! Enjoy!
