Blueberry Pie (fruit Filling)

Ingredients: (Hit your return key to start a new line)
prepared Two Crust/double pastry recipe

4 cups blueberries

1/4 c. tapioca granules

1 c. sugar

1 Tbsp. lemon juice

(1 Tbsp. butter)

Directions:
Heat oven to 400 degrees F.

Mix blueberries, sugar, tapioca, and lemon juice in bowl; let stand 15 minutes.

Fill pastry-lined pie plate with blueberry filling; Dot with 1 Tbsp. butter. Cover pie with top crust; seal and flute edge (or crimp w/tines of a fork). Cut several slits to allow steam to escape. Bake one hour, or until the fruit filling Bubbles and juices are beginning to thicken.

If the edges of the crust are browning quicker than the middle: cut a Circle out of a large sheet of alumimum foil (circle's a bit smaller than the top crust), and lightly crimp the 'pie protector' onto the pie.

Other suggestions and comments:
Blueberry Pie is one o' my faves, because: it requires neither Peeling nor Pitting of fruit ;-) The berries freeze wonderfully well; we freeze 'em on a cookie sheet, then bag 'em up in plastic bags for storage.

Slices of pie re-heat nicely in the microwave in under a minute, and are soooo good with vanilla ice cream!
