Bran Muffins with Raisins

yields 12 muffins

Ingredients: (Hit your return key to start a new line)
3/4 c. milk

1/4 c. canola oil

1 egg, beaten

1 1/2 c. bran flakes w/raisins

1 c. all-purpose flour

2/3 c. sugar

2 tsp. baking powder

1/2 tsp. cinnamon

------------------------------
optional 'topping':

1 Tbsp. melted butter

1/4 tsp. cinnamon

1 Tbsp. sugar

Directions:
Preheat oven to 400 degrees F.
Grease cupcake tin cups, or line 'em with paper liners.

Combine milk, oil, and egg in bowl. Stir in cereal; let stand at least 10 minutes. Stir to break up cereal.

Combine flour, 2/3 c. sugar, baking powder and 1/2 tsp. cinnamon in separate bowl. Add cereal mixture all at once to flour mixture; stir just until moistened.

Distribute mixture evenly among the prepared muffin cups. Bake 20-30 minutes, or until tester/toothpick inserted in center emerges Clean. Remove from pan.

If you like, brush the top of the warm muffins with butter, and sprinkle with combined sugar and cinnamon.

Other suggestions and comments:
Without the extra 'topping', each muffin has approx. 170 calories, 3 g. protein, and 6.5 g. fat.

I used 'budget brand' bran cereal. It is not quite as raisin-y as the national brands, but is inexpensive enough that tossing in a handful of extra raisins does not bother me in the least ;-) I don't like to pay more, per pound, for cereal than I do for steak, chicken, or cheese!!

These are not as sweet as the big, cake-like muffins you purchase at a bakery, but they are very good. With a glass of milk, it's a way better choice than Pop Tarts, and the muffins are OK on the dinner table, as well as breakfast.

I often double such recipes, especially before a lazy weekend, when everyone is home, checking the Tupperware and cupboards for Munchies, and the children are often up before me, watching cartoons. It takes little more time to make 24 than it does to make 12.
