1 1/2 c. bran cereal flakes
1 c. mashed banana (approx. 3 medium, but Measure!)
1/2 c. milk
1 egg
3 Tbsp. vegetable oil
1 c. all purpose flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. ground nutmeg
Directions:
Preheat oven to 400 degrees F.
Grease muffin cups, or line w/paper liners. Combine cereal, banana, milk, egg and oil in large bowl; mix well.
Allow to stand for 10 minutes; stir to break up cereal flakes.
Combine flour, sugar, baking powder, baking soda and nutmeg in separate bowl. Add cereal mixture allllll at once, to flour mixture, stirring until just moistened.
Portion evenly into prepared muffin cups. Bake 20-25 minutes or until lightly browned, and tester/toothpick inserted in center comes out clean. Serve warm.

This is Not a Super Sweet muffin, like those big ones from the bakery that closely resemble Cake, in flavor and calorie content. ;-) Many people who can't tolerate that extra sugar can appreciate the difference.
I used a 'budget brand' box of cereal. (National brands of cereal are generally so expensive that if I am paying that much per pound, I eat it as Cereal, vs. transforming it into something else)
You could add a bit of cinnamon sugar to the top of some of the muffins, if you like. Without that addition:
123 cal. per muffin, w/2.5 g. protein, 4 g. fat
Serve with milk, and fruit. Way better than a pop tart...
Easily re-warmed in 20-30 seconds; wrap in paper towel or a cloth napkin (bread basket: heat several in about a minute).
The proportion of banana in the mix affects the texture greatly, so always measure! For some reason, I always have best luck when using the so-called 'dry measure' cups, vs. liquid measure w/pour spout; I think it's 'cuz I really want to use alllll of the banana, but 'tis better to err on the side of Wasting a bit o' banana mush ;-)
Around our house, when the weather warms, it would be easy to Double the recipe, because the bananas go Spots-ville more quickly. Because the muffins are not ultra-sweet, they are just as much at home on the Dinner table as at breakfast.
