Applesauce/Bran Bread

Ingredients: (Hit your return key to start a new line)
one can applesauce (15.5 oz.)

2 eggs

1/4 c. canola oil

1 tsp. vanilla extract

2 c. bran flake cereal

1 c. brown sugar, packed

1/2 c. chopped walnuts or pecans, optional

2 1/2 c. all-purpose flour

2 1/2 tsp. baking powder

1 tsp. ground cinnamon

1/2 tsp. baking soda

1/4 tsp. ground cinnamon

Directions:
Preheat oven to 350 degrees F.
Lightly grease 9 x 5 x 3 inch loaf pan. Combine applesauce, eggs, oil and vanilla in bowl; mix well. Stir in cereal; let stand 10 minutes. Stir in brown sugar and nuts; mix well.

Combine flour, baking powder, cinnamon, baking soda, nutmeg (and 1/2 tsp. salt, if desired) in separate bowl.

Add cereal mixture allll at once to flour mixture, stirring until just moistened.

Pour evenly into prepared loaf pan. Bake for 65-75 minutes or until toothpick/knife/tester inserted in center emerges Clean. Let stand for 15 minutes before removing from pan; cool and slice.

Makes one fat li'l loaf! ;-)

Other suggestions and comments:
You can control the sweetness by which applesauce you choose: sweetened, or unsweetened. The recipe didn't specify, and I had a teeny bit less than 2 cups of sweetened applesauce left in a large plastic jar (the kids always want to open 'em, but never want to Finish 'em... ;-) If I am lacking only a spoonful or so of applesauce to measure up, I just add a little bit o' milk...seems to work...

This is a Not So Sweet bread, with added fiber that many fruit-type breads lack. I used an Economy-brand box of bran. The calorie count for a 1/2 inch slice lists at 162 calories, which is less than some!! 3 g. protein. Add a piece of fruit, and a glass of milk, and you are set.

Wrapped in a piece of paper towel, it re-warms nicely in the microwave, in about 30 seconds.
