Eggnog Encore (French Toast)

15-20 min. for 12 slices

Number of servings:

Ingredients: (Hit your return key to start a new line)
up to 2 cups of Eggnog (carton type; light, regular or Classic)

approx. 12 slices of stale, firm, white Bread

Butter (up to 8 Tbsp...but you may use less!)

Directions:
Melt a bit of butter in a skillet, over medium heat.

Pour eggnog into a shallow dish, and dip a bread slice into it, turning to coat both sides.

Place bread slice in the pan; hopefully, you can get more than 1 slice at a time in there; Fry until golden brown on both sides.

Repeat steps w/butter, bread dipping, and frying, until you've used up the stale bread (or the family groans "no more!"

Other suggestions and comments:
French bread, cut on the diagonal, has a wonderful appearance, taste, and texture. There's also a bread that's commonly served in steak houses; we used to call it "Texas Toast": squarish, about an inch thick. If you have access to a neighborhood 'thrift bakery', look for this stuff, 'cuz it makes the best French Toast!!

Powdered Sugar and Berries would be great on this; syrup would probably be 'gilding the lily' a bit much, especially w/Regular formula eggnog (already quite sweet).

Eggnog can be frozen, in the carton, which is worth considering If you like to use some in recipes; it does drop in price right after Christmas. For drinking purposes, expect it to be a little different in texture and flavor. Thaw in the fridge!

You might add a pinch or so of Nutmeg to the batter; sort of depends on your taste buds, and the regional recipe for your eggnog.
