Let Them Eat (Cup)Cakes

In mere minutes, we will know if Punxsutawne Phil has seen his shadow and what to expect for the remainder of winter.  Shadow or not, this is certainly the time of year when most folks (save for my wonderful snow-and-winter-loving-friend Caris) are ready to be through with winter.  Why not warm up someone’s winter blahs with these easy to make and super sweet tasting lime cupcakes?  As an addendum to yesterday’s post of tips to help make cake baking a wee bit easier, I share this recipe for even *easier* cake baking:  making cupcakes.


Cupcakes are all the rage these days, and I can certainly understand why.  For most, cupcakes are the perfect amount of cake and frosting for one—although my boys would argue at least two are necessary.  Cupcakes’ flavor combinations and decorations can be infinitely creative, and last but not least, they look pretty cute on a plate.Perhaps G is one to bow to baking trends, but this year, for his birthday “cake,” he requested cupcakes.

When I asked him what sort of cupcakes he would like, he responded “green,” and with further questioning, “lime flavored.”  I looked for a lime cupcake recipe and when I couldn’t find one that was fairly simple, I came up with this one on my own.
 

Lime Cupcakes with Lime Frosting
 

2 ¾ cup cake flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 cup butter, softened
2 cups sugar
zest of two limes
juice of one lime
4 eggs
1 cup buttermilk
 

Preheat oven to 350 degrees.
 

In a large bowl, mix the cake flour, baking powder, salt and baking soda.  Set aside.
 

In a medium bowl, cream the butter and sugar.  Add the lime zest and juice and stir well.  Add the eggs, one at a time, stirring after each egg.
 

Add 1 cup buttermilk.  Stir well.  Add ½ the flour mixture, stir well.  Repeat.
 

Line cupcake tins and pour approximately ¼ cup batter into each cupcake holder.
Bake 10-15 minutes, or until a toothpick inserted in the middle comes out clean.
 

Makes 2 ½ dozen.

Frost with your favorite frosting, I did a quick lime buttercream and voila:
