Inside-out Apple Crisps

It’s hard to believe, but this week is the last full week of October!  Next week at this time, I’ll be trying to mentally prepare for the candy onslaught and the fun of trick-or-treating.  But for now, I want to share the last of my new original recipes to celebrate National Apple Month.

You can check my National Apple Month posts from the last three weeks, three other recipes that feature apples:  Individual Coffee Cakes with Apples and Bacon, Apple Pie and Pork Loin with Apples and Sage.  For the last recipe I have a simple and sweet way to enjoy apples, but stuffing them with oats and spices and baking them in the oven.

Both my boys love this new take on apples, and while we served it as a dessert (oh the joy of seeing my boys eat a whole apple and calling it dessert!), but you could also make this a really healthy breakfast too.  

Inside-out Apple Crisps

4 large, firm apples
Juice of ½ of one lemon
½ cup oats
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon vanilla extract
1-2 tablespoons honey (depends on the tartness of the apples)
1 tablespoon vegetable oil

Preheat oven to 350 degrees.

Wash the apples and slice off the top ½-3/4 inch and bottom ½-3/4 inch of the apple, reserving the tops and bottoms of each.


With a paring knife, cut from the top to the bottom of each apple, removing the core.  

Slice the sides of apple flesh off from the core, and place in a bowl (with four apples you will have about 1 cup of apple flesh).  Squeeze the lemon juice from the ½ lemon over the apple flesh.

Once all 4 apples are cored, place four bottoms of the apples in a 9x9 glass pan and top with each bottom’s cored apple.

Dice the apple flesh and combine with the oats, cinnamon, nutmeg, vanilla, honey and oil.  Stir well.

Hold each apple on top of it’s bottom and fill with ¼ of the oat and apple mixture.

Place the apple top on the side of each apple, and pour about 1 cup of water in the bottom of the 9x9 pan.

Cover with foil and bake for 25- 30 minutes.

Remove from oven and serve either immediately, or at room temperature.  They also keep well in the refrigerator too!

Makes 4 apples.
