Cucumber Raita

Raita is an Indian condiment, the one you can see in the picture I posted yesterday:



I hesitate to make this comparison, but raita is the Indian ketchup, in that it is a frequent condiment with Indian meals.  Made with yogurt, cucumber and spices, there are infinite ways to make raita, but here is a good basic recipe.  Feel free to jazz this recipe up with some more spices or herbs, but this is my go-to raita.

Cucumber Raita

16 ounces plain low fat Greek-style yogurt
½ English cucumber, peeled and shredded
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons julienned fresh mint (optional)

Combine all ingredients.  Like most sauces or dressings, the flavors intensify the longer they sit, so this is a perfect make-ahead sauce.

Serve with bread for dipping or as a side to a main dish.

Makes about 2 cups.
