Back to School Quick Dinner Idea

There really aren’t many dinner ideas that are quicker than fish. Fish cooks extraordinarily fast, and for a busy week night dinner, it can be on the table usually in about 15 minutes flat. This recipe uses a really quick marinade to flavor the seafood, but if you are in a crunch you can use a jarred teriyaki sauce with great success. Tilapia, cod, halibut, or striped bass (all “best choices” for our region on the Seafood WATCH list) would work great for this recipe. You can either grill it or bake it, and the fish should be done, depending on the thickness, in about 10 minutes. Serve this dish with your favorite vegetable and perhaps a rice side. The teriyaki flavors really appeal to children, a good thing on a busy week night. Teriyaki Tilapia 4 – 6 ounce tilapia filets 1 cup soy sauce ¼ cup brown sugar ½ teaspoon dried ginger ½ teaspoon garlic powder Preheat oven to 400 degrees. Rinse and pat dry the tilapia. In a separate bowl, mix the soy sauce, brown sugar, ginger and garlic. Pour over the tilapia and let sit for 5-10 minutes, while the oven preheats. Place the fish on a greased baking dish. Bake for 8-10 minutes, or until the fish flakes when gently pressed with a fork. Serves 4. SPC
