The weather forecasters had been calling for a big snow for days, but I always take forecasts with a grain of salt. More often than not, they fail to materialize. So when I woke up this morning and my alarm clock radio was in mid-sentence saying, "...the entire campus of Ohio State is closed..." I knew the forecasters were correct. OSU *never* closes, and as I expected, all the schools, including R and G's preschool, were shut down. In an effort to entertain the little ones, I have had to get creative. It started early this morning with... Snowman Pancakes Dry Ingredients: 1 cup whole wheat flour 1 cup white flour (you can use all whole wheat or all white flour, if you don't have both on hand) 2 tablespoons sugar 4 teaspoons baking powder 1/4 teaspoon salt 1/4 teaspoon cinnamon Dash of nutmeg Wet Ingredients: 2 eggs, beaten 2 cups milk 1/4 cup applesauce Combine dry ingredients. In a separate bowl, combine wet ingredients. Add the wet ingredients to the dry ingredients and mix until *just* blended (there will be little lumps--that's okay). Preheat a nonstick pan to medium heat. Pour the batter into the pan in small circles, aiming each new circle about an inch and a half from the last one and waiting about 5-7 seconds between pours, so the other circles "set" and you don't end up with one big oval. Wait until the pancakes are covered with little bubbles, and flip and let cook for 2-3 minutes longer. We used a preshredded carrot piece and powdered sugar to make the pancakes look snowy. Fun! SPC
